The Best Mother's Day Present Ever!
So I have to admit something. Every year for Mother's Day I ask for one thing. And that is a BREAK! I find it kind of ironic the one thing I want for Mother's Day is to not be a Mother. ;) At first I felt kind of guilty for feeling that way, but 4 kids and 78840 hours later (that's how many hours I have been a mother;) that guilt no longer exists. I guess my favorite part of getting away, is that I finally get to miss them. I don't leave for work everyday and have the chance to miss my kids like my wonderful amazing fantastic Hubby! Nope I eat, sleep, breath, and even potty with my kiddos all around me all of the time. There is no privacy, or alone time, or even hide in a closet time ( I have actually tried this and I discovered my 2 year old is an excellent seeker!). For me this is the best part of my Best Ever Mother's Day Gift, it is the coming home! I finally get what my hubby gets to experience everyday. Kids so excited to see him that they swarm him when he walks in the door. To know they missed you so much that they can't contain their excitement. And in return to know that you missed them that much too. That is the BEST Mother's Day present. You get to be reminded why you do this day in and day out. Its most definitely for those slobbery snotty welcome home kisses and hugs! Happy Mothers Day to all you Fabulous Mommies out there! I hope you get your Bestest Mother's Day Ever too!

Kraft Foods Cheesy Mexican Chicken w/ a Twist!
Are you in need of dinner ideas for tonight, then look no farther I have the perfect meal for you! ;) Are you sold yet?? :)

Kraft Cheesy Mexican Chicken modified by me :)
6 small boneless skinless chicken breast halves (about 1-1/2 lb.), pounded to 1/4-inch-thickness

6 small boneless skinless chicken breast halves (about 1-1/2 lb.), pounded to 1/4-inch-thickness
1 can
(10-3/4 oz.) condensed cream of chicken soup
1-1/2cups
KRAFT Shredded Mild Cheddar Cheese, divided
1/2 cup
milk
1 pkg.
(1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
2 cans of black beans rinsed and drained
1 bag of frozen corn (or 2 cans) ( you can also add red peppers or whatever veggies you like)
2 cups
corn chips
4-1/2 cups
cooked rice
Sour Cream
Green Onions
Cilantro
Cook the Chicken in your Crock Pot for 4-6 hours on high.
Drain and put back into the Crock Pot.
Once chicken is done add in the cream of chicken, 1 cup shredded cheese, milk, taco seasoning, black beans, and corn.
Cook for about another hour until it is all bubbly and gooey :)
Cook rice according to package.
Then chop up onions and cilantro (you can add some limes too)
Layer on your plate; rice, chicken, corn chips, more cheese (if you like), sour cream, cilantro and green onions!
Try not to eat the whole thing! ;)
I also call this my Mexican version of a Hawaiian Hay Stack.

Cheaper and Healthier Homemade Bolognese Sauce (aka spaghetti sauce ;)
I found this recipe in a magazine and thought Hmm, maybe I will give this a try. I loved it b/c it held to my rules of cooking, not to many ingredients and can it go into my crock pot. :) The answer to both were yes, so I decided to give it a try. I am so glad I did this sauce is super easy, super yummy, full of good stuff, and cheap too!
I have to admit I totally forget to take pictures after it was done, so you will have to forgive my mommy brain. ;) I promise I will make this again so I will get those on here!
Bolognese Sauce

Bolognese Sauce
1 pound ground beef (85% lean)
1 cup diced onion
1 tablespoon minced garlic
1 carrot, shredded (you could also add in shredded zucchini, peppers, whatever you wanna sneak into the sauce because they will never know ;) my food processor made easy work of this step!
1 tablespoon dried oregano
1 teaspoon garlic powder
1 bay leaf
salt and ground black pepper to taste
42 ounces canned crushed tomatoes
2 cups of water
Heat a large pot over high heat. Stir in the beef, onion, garlic,
and carrots. Cook and stir until the beef is crumbly, evenly browned,
and no longer pink. Drain and discard any excess grease. Stir in the
oregano, garlic powder, bay leaf, salt, and black pepper. Add the
tomatoes and water. Bring to boil, then reduce heat to medium-low and
continue to simmer for 1 to 1 1/2 hours or you can put this into your crock pot on low for 4-6 hours or high for 2-4 hours (time depends on how much you make and your crock pot). Pour all but 2 cups of the
sauce in an airtight container and freeze for future use.
Serve warm with your favorite pasta or use to make lasagna.
The cost was really minimal and I made a double batch, so I had tons leftover to freeze.
Meat $3.19 lb
Carrots $.50 bag
Onions $.50 each
Garlic $.50 each
Crushed Tomatoes $.47 for a large can!
Everything else I have in my pantry :)
Total cost for about 2-3 meals worth $5.63 or $1.88 per meal
Now here is why I said healthier. In making this sauce I decided to look at the label of a common Tomato Sauce and I was shocked at the amount of Sodium alone in this one can. When I compared it to the 1 can of crushed tomatoes I realized wow what a difference. On top of that you can add a ton of healthy veggies to this sauce and make it even better for you. Take a look at the picture and see the proof for your self!

How to Coupon With Out Coupons
Many many times people see me in the store with my massive binder; 2 carts; and 4 kids, and ask me how; why; and is it worth it? My response is yes because it allows me to be at the store with 4 crying kids and not at work wishing I was at home taking care of those screaming, fighting, begging little angels. ;) Couponing has allowed me to keep our growing family's grocery budget somewhat reasonable, and it also allows me to build up a food storage for my family with out it costing me and arm and a leg.
Is it for everyone?
The truth of that is no. I have many friends whose schedules and lives do not allow them hours a day (which in all honesty is what you will spend when you first start this) to gather coupons, sales ads, and scour the blogs for the match ups.
If I am one of those people, them how to I save money on my groceries?
Fear not all of you who are not ready to jump into the wonderful world of couponing! I have a solution for you. It is the wonderful world of price matching! Walmart (who I have a love/hate relationship with) has this whole price-matching thing down perfect. Now always remember each store can be a little different, so get to know your store policies on price matching before you go. Mine does not require me to have the ads in hand, but others may. The nice thing is most ads are online and are easily printable.
How do I price match effectively?
1. Know your price points (or what is a good price) for the items on your shopping list. Does your family eat a lot of cereal? Do you wind up paying $3.00 a box often? Then when you see cereal on sale for $1.50 a box that is probably an awesome deal for you and a stock up price for your blossoming stock pile.
2. Get to know all the little small grocery stores in your area and check them weekly for their sales. I have discovered that our little grocery stores have some of the best deals on produce and meat (which our Walmart will price match!!).
3.With price matching is you need to pay attention to sizes and quantity limits. I have to vent just a little, it really bothers me to see people price matching the giant size items at Walmart for the sale prices of the smaller sizes. The whole a few bad apples can potentially ruin it for the bunch saying. :( That being said I have asked if I could price match the larger size by doubling the price to match the price per ounce, and they have let me.

Back in the Saddle!
2 years ago my husband and I decided it was time for #4 to join our little family. At that time I was just starting my blog and things were really starting to get going with it. After a lot of thought and prayers I just knew that I had to put my family first and my blog on hold. One thing I learned from the six months of full on blogging was that those ladies who run the deal sites are amazing. I was spending 8+ hours a day trying to keep up with all the deals and because of that I knew that once we got pregnant I would not be able to keep up that pace. For many women pregnancy doesn't slow them down. For me it is the exact opposite. Our life comes to an screeching hault and I go into survival mode. This pregnancy was especially hard on me b/c at about 14 weeks I got Iritis (which is basically a painful inflammation of the iris of the eye, and painful is an understatement.) from my eye meeting my child's very hard head as I was kissing her goodnight. This put me down for another 2 months, so I know that this decision was truly inspired.
9 months later we were blessed with our first boy! Alexander was born with my usual 2 weeks early and at a healthy 8 lbs 1 oz (my smallest baby thus far). Basically by baby number 4 you sneeze and they come out ;) Ok so not really, but that's the hope right! In the midst of welcoming baby #4 we had the bright idea to move at the same time. Trust me I ask myself all the time what was I thinking!! Three months after he was born we moved just over the mountain into our new home. If you ask me now I will tell you it was worth it, but 6 months ago I was not convinced.
That view makes it totally worth it!
So here I am ready to start up again, and I have to admit I was not exactly sure where I wanted to head with my blog. I feel like there are a ton of couponing blogs, and mommy blogs, and cooking blogs, and crafting blogs and blogs about blogs ;). The question I have been pondering is where do I fit in? And then it hit me, why must I fit in? Why do I need to limit myself? So I decided my blog is for me and about me, so I will make it about everything that interests me, or inspires me, or I just plain like. It is a new genre I would like to call "everything but the kitchen sink " blog! So ready or not here I go!!!!!!
